easy, filling, and vegan!

just a note, i am not vegan. i was for about a month until my skin got really bad. for some reason i think it changed everything in my body or something. before i had almost perfectly clear skin and now it's breaking out in places it's never broke out before! it may be a detox thing i guess, but it's been almost another month since i stopped and it's still pretty bad :( i still rarely eat meat and dairy. i stopped eating eggs and stuff like that. things like baked goods or occasionally having a hamburger happen. so as i'm not fully vegan i do eat way less animal products than i used to.

i do want to become fully vegan in the future though. preferably high carb low fat ;) i believe it's much simpler, cleaner, easier, and better on the body. what you put into your body shows on the outside. as i get older i realize more and more what i, as an individual, believe in. it makes sense that milk from a cow is meant for a baby cow. it makes sense that animals should be treated with respect ( i do understand how sometimes meat is needed, but treating an animal bad and then killing it is just a lil mean ). and it makes sense that food is energy. listen to your body, it  knows more than you. if you're hungry, eat. if you're thirsty, drink. if you want a sweet, have one. moderation is key.

alright enough ranting. let's talk about food. this took about 20 minutes to throw together. it's super easy to make enough to have leftovers. oh,and it tastes flippin amazing.



start off with some rice since that takes the longest. i used jasmine rice, which smells beautifully and tastes beautifullier.

as the rice is working it's magic start your sauce? topping? i don't really know what to call it. it just tastes real good. 

oh, so you wanna know what's in it?

- one pretty large diced tomato (or you could use canned tomatoes, preferably no salt added to help with bloating and digestion)

-half a can of rinsed corn

-half a can of RINSED beans. i used a tri bean can, it has three diff types of beans duh. RINSE those BEANS. i learned the when you rinse them you get this foamy layer that comes off. THAT is an indigestible fiber that causes gas. rinse those beans and your stomach will thank you

-some tomato sauce to make it more saucy (optional)

-your choice of spices and herbs. i only used basil(my all time favorite herb in the whole world ever) you could go for a more spicy meal. or maybe ur craving pizza and you wanna throw some oregano on that baby. its your choice. experiment.

-you could also add some lettuce to further help with digestion. lettuce helps when you're eating a cooked meal.





mmm mm look at that sauce. let that simmer until your rice is ready. stir it a couple times while it's heating up and you're good to go.

mix them together. eat them separately. you do you.

alrighty, there you go! an easy, filling, vegan meal! i eat this so much. it's honestly my favorite and it's so so easy! enjoyy
